Her Story
The Promise That Started It All
Penny’s story didn’t begin in a clinic. It began in a classroom. In 8th grade, a teacher told her she was fat — with no guidance, no compassion, and no direction on what to do about it. That single moment planted a deep seed of shame. Without any help, Penny spent the next more than 15 years silently struggling with an eating disorder — afraid to eat, afraid not to eat, and searching desperately for answers no one seemed to have.
Even as a teenager fighting her own quiet battle, she turned her pain into purpose. She spent hours in the library — not for school, but searching for holistic, natural ways to help relatives who had been diagnosed with chronic disease. That love-driven research, done alone and in secret, planted the seeds of everything she would one day build.

Years later — now a mother — Penny faced a health crisis of her own. For nearly three years she suffered from severe, unexplained dizziness, agonizing abdominal pain, and chronic indigestion. Doctors had no answers. The dizziness became so debilitating she stopped driving on the freeway. Some mornings she could barely get her children to school.
One day, she found herself on the bathroom floor — in so much pain she couldn’t stand. In that moment of desperation, she prayed and made a promise: if she could get better, she would spend her life helping as many people as she could.
Two days later, she was guided to a holistic wellness center. Food sensitivity testing revealed the truth: three everyday foods — black tea, bananas, and strawberries — had become toxic to her body. She would never have known without the data.

On a Mission to Reverse the Obesity Epidemic
Penny’s relationship with food and body image is deeply personal. In 8th grade, a teacher told her she was fat — with zero guidance, zero direction, and zero support. That moment planted a seed of shame that led to over 15 years of struggling with an eating disorder.
She knows what it feels like to be afraid to eat. She has seen firsthand how many people eat so little — terrified of food — and still can’t lose weight, because no one ever told them the truth: not eating enough is one of the biggest reasons people gain fat. It’s not always about eating less and moving more. Your body needs to know its true baseline — your Basal Metabolic Rate — before any strategy can actually work.
That’s why data is at the center of everything Penny does. When clients know their true numbers, they stop guessing, stop struggling, and start getting real results. She has worked with clients ranging from small children to those in their 90s — and she is on a mission to reverse Type 2 Diabetes and obesity one person at a time.

In 2018, Penny traveled across the United States teaching people how simple it is to cook healthy meals quickly. Her message was straightforward: healthy food doesn’t have to be complicated, expensive, or time-consuming.
She created her cookbook — The Fast Foods Diet: Nutritious Made Simple, Quick, and Easy — because she wanted to show families that delicious, nutritious meals could be made quickly, without taking time away from the people and things they love.
Her recipes and expert advice were featured on NBC, CBS, and FOX, reaching families nationwide and empowering them to take control of their health — one meal at a time.
